I got approved for UVP through my state and have been able to track
the status of my packet through G1 Gateway. Today, it changed to what is
shown in the picture. Does this mean it’s been assigned a scroll and is
going through the scroll approval process?

that’s exactly what that means. You are assigned to scroll and moving through the process. The process is relatively streamlined once assigned to scroll.
